Spiralized Beet Salad

Ingredients:

Ingredients:
- 4 Tbsp Olive Oil
- 1 Cup Onion, chopped
- 5 Cups Beets, spiralized
- 2 Tbsp Apple Cider Vinegar
- 2 Cup Quinoa, cooked
- 4 Cups Spinach
- 4 oz Feta Cheese
- 6 Tbsp Hemp Seeds
- Sea Salt and Pepper to taste
- In a large skillet over medium heat add Oil, Onion and Garlic. Sauté until Onions are tender, about 2 minutes.
- Add Beets, Salt, Pepper and Apple Cider Vinegar to the skillet and cook for 10 minutes or until Beets are soft.
- While Beets are cooking, prepare the salad bowls. Divide the Spinach and Quinoa between 2 bowls.
- When Beets are cooked, divide them equally over the top of each prepped salad bowl.
- Top each bowl with 1 oz Feta Cheese and 1 ½ Tbsp Hemp Seeds.
