GOLO Refried Beans

Ingredients:
- 2 Tbsp Olive Oil
- 2 Cups Pinto Beans, drained and rinsed
- ¼ Cup Onion, finely diced
- ¼ Cup Jalapeno Pepper, finely diced
- 2 Cloves Garlic, whole
- 1 Tsp Cumin
- 1 Tsp Chili Powder
- ½ Lime, juiced
- Sea Salt and Pepper to taste
- Heat olive oil in a skillet over medium heat. Cook whole garlic cloves on each side for about 2 minutes, or until slightly browned.
- Mash garlic cloves in the oil with a fork.
- Stir in the pinto beans, onions, peppers and spices with the mashed garlic and cook for about 5 minutes or until heated throughout, stir occasionally.
- Mash the bean mixture with a potato masher until desired consistency. Squeeze lime juice over top and stir to combine.
