Ingredients:- 1 ½ cups oatmeal, uncooked
- 4 oz walnuts, chopped
- 2 tsp cinnamon
- ¼ tsp ginger
- ¼ tsp sea salt
- 1 cup apples, diced
- ½ cup plain Greek yogurt
- ½ cup whole milk, room temperature
- 2 eggs, room temperature
- 3 tsp maple syrup
- 1 tsp vanilla extract
- 2 tsp butter, melted and slightly cooled
- 4 Tbsp chia Seeds
- Preheat oven to 350°. Lightly grease an 8 X 8 inch glass baking dish.
- In a large bowl, combine oats, walnuts, cinnamon, ginger and salt. Mix in apples, Greek yogurt, milk, eggs, maple syrup and vanilla. Stir in butter and chia seeds until all ingredients are well combined.
- Spread mixture into a baking dish and bake for 30 minutes or until golden brown and oatmeal is set. Allow to cool in baking dish for at least 5 minutes before serving.
- Separate into 4 equal servings.
