Ingredients:
- 2 Tbsp olive oil
- 1 cup onion, chopped
- 1 cup celery stalks, chopped
- 1 cup large carrots, chopped
- 1 cup mushrooms, sliced
- 2 cups baby kale leaves
- 10 garlic cloves, minced
- 2 bay leaves
- 2 ½ cups chickpeas, drained and rinsed (about 2 cans)
- 2 lb. chicken breast (or turkey), cooked and shredded
- 8 cups chicken stock
- 2 tsp turmeric
- 1/2 to 2 tsp crushed red pepper (depending on how spicy you want it)
- Sea salt and pepper
- In a large pot or dutch oven, heat oil over medium-high heat and sauté onion, celery, and carrots, stirring occasionally, about 5 minutes. Add mushrooms and garlic, cooking another 3 minutes.
- Stir in the chicken stock, bay leaves, turmeric, crushed red pepper, salt and chickpeas; bringing to a boil. Mix in shredded chicken, cover and turn down heat to a simmer for about 15-20 minutes.
- Add kale, cover and simmer and additional 5 minutes. Discard bay leaves.
- Divide into 5 equal servings.
