Ingredients:
Sauce:
- 1 Tbsp tamari or soy sauce
- ½ tsp sugar
- 1 Tbsp rice vinegar
- ½ cup brown rice, cooked
- 6 oz shrimp, steamed
- ½ cup cucumber, peeled and chopped
- ½ cup asparagus, steamed and cut into 1-inch pieces
- ¼ cup carrots, julienned
- 1 tsp pickled sushi ginger
- ¼ cup avocado
- 1 sheet dried seaweed, crumbled
- Juice from 1 small lemon
- 1 Tbsp sesame seeds (optional)
- Combine sauce ingredients in a small pot over medium heat. While continuously whisking, bring it to a boil and reduce to a slightly syrupy consistency, approximately 3 minutes. Do not walk away as it can easily burn. Remove from heat and allow to cool while assembling sushi bowl.
- Combine remaining ingredients, except lemon juice and sesame seeds, together in a serving bowl. Stir to combine.
- Squeeze lemon juice over the top, sprinkle with sesame seeds (if using) and drizzle with sauce.
- Serve immediately.
