Ingredients:
- 1 Tbsp olive oil (to coat slow cooker)
- 12 oz chicken breast
- Sea salt, pepper & garlic powder to taste
- 2 cloves garlic, minced
- 2 cups mushrooms, sliced
- 1 cup Marsala cooking wine (may substitute chicken broth if you prefer)
- ½ cup water
- ¼ cup cornstarch
- Lightly grease the inside of your slow cooker with olive oil.
- Season chicken with salt, pepper and garlic powder and place in the bottom of the slow cooker.
- Top chicken with garlic, mushrooms and Marsala (or broth). Cover and cook on low for 5-6 hours.
- Using a slotted spoon, remove chicken from slow cooker and place on a plate.
- Whisk together water & cornstarch until dissolved, then pour into the slow cooker and stir.
- Add chicken back to the slow cooker and turn on high. Cover and cook another 20-30 minutes or until sauce is thickened.
- Taste and add salt & pepper if needed.
- Serve immediately.
