Ingredients:
- 1 Cup Arugula
- 1 Cup Cherry Tomatoes, halved
- 3 oz Chicken
- 1 oz Pine Nuts, toasted
- 1 oz Mozzarella Pearls
- ½ Cup Nectarines, grilled
- 1 Tbsp Olive Oil
- Juice from 1 Lemon
- Zest from 1 Lemon
- Preheat the grill on medium-high heat. Place chicken on the grill and cook for about 5 minutes on each side.
- Slice the nectarines and cook on the grill, along with the chicken, only until you can see the grill marks, 1-2 minutes.
- In a small pan, toast the pine nuts in the toaster oven until slightly browned.
- In a small mixing bowl whisk the olive oil and lemon juice.
- Lay the arugula in a salad bowl along with the chicken, nectarines, cherry tomatoes and mozzarella pearls. Add in the olive oil lemon dressing.
- Top with the pine nuts and lemon zest.
