GOLO BBQ Chicken w/ Peachy Salad

Ingredients:
- 4 Tbsp olive oil
- 2 Tbsp red wine vinegar
- ¼ tsp ground black pepper
- ¼ tsp sea salt
- 2 cups fresh peaches, sliced
- 4 cups broccoli slaw
- 1.5 lbs (24 oz) chicken, grilled or baked and cut into strips
- ¼ cup GOLO BBQ sauce (recipe below)
- 1 oz Feta cheese (4 Tbsp)
- Whisk together in a large bowl olive oil, red wine vinegar, salt and pepper. Add peaches and slaw to mixture and toss to coat.
- Place chicken strips in a large bowl and toss with BBQ sauce.
- Divide the peaches and slaw mixture evenly and top with chicken strips.
- Sprinkle with Feta cheese.
Ingredients:
- 1 large onion
- 3 cups tomato sauce
- 4 Tbsp tomato paste
- 2 cloves crushed garlic
- 1 Tbsp paprika
- 2 Tbsp honey or maple syrup
- 3 Tbsp balsamic vinegar
- 1 Tbsp Worcestershire sauce
- Pinch of salt and pepper
- 1 tsp chili flakes
- Add a little olive oil to a pan, add the onion, and cook on low for 5 minutes until softened.
- Add the rest of the ingredients to the pan and simmer for 3 minutes.
