Ingredients:
- 1 1/2 Tbsp olive oil
- 2 cloves garlic, minced
- Fresh ginger, 1-inch piece grated
- 1 egg
- 2 cups brown rice, cooked
- 1 cup broccoli, chopped
- 1 cup peas or snow peas
- ½ cup carrots, shredded
- ½ cup corn
- 1 cup mushrooms
- ¼ cup onion, chopped
- ½ Tbsp rice vinegar
- 2 Tbsp tamari
- Fresh chives, basil or any other add-ins
- Heat 1 Tbsp olive oil in a large pan over medium heat. Add the garlic and ginger to the pan, stir fry for 1 minute.
- Crack the egg directly into the pan and gently stir until barely cooked, 1-2 minutes.
- Add the rice and stir fry for a few minutes, adding the remaining olive oil and turning the heat up to get it sizzling. The egg should incorporate and stick to the rice.
- Add all vegetables, rice vinegar and tamari to the pan and stir fry for another 1-2 minutes.
- Remove from heat, stir in any additional add-ins and serve.
- Divide into 4 equal servings.
