Ingredients:
- 1 cup baby kale
- 1 cup turmeric cauliflower Rice (see recipe)
- ¼ cup sweet potatoes
- ¼ cup chickpeas
- 6 oz chicken
- 1 Tbsp coconut oil
- 2 Tbsp turmeric tahini cressing
- Sea Salt and Pepper
- 1 tsp Garlic Salt
- 1 tsp Cinnamon
- 2 Tbsp coconut milk
- 1 Tbsp tahini
- 2 Tbsp water
- 1 Tbsp lemon juice
- ¼ tsp turmeric
- ½ tsp maple syrup
- Sea salt to taste
- Preheat oven to 400°. Line a baking tray with tinfoil. In a medium bowl toss chickpeas and sweet potatoes in ½ Tbsp coconut oil. Line on the baking tray and sprinkle with sea salt, pepper and garlic salt. Roast for about 30 minutes. Set aside
- Heat remaining ½ tbsp coconut oil in a medium sized pan over medium heat. Add chicken and cook until done throughout. Set aside.
- In a serving bowl fill the bottom with kale. Then add the cauliflower rice, roasted sweet potatoes, chickpeas and chicken. Top with 2 Tbsp turmeric tahini dressing and serve.
