Ingredients
- 6 cups tomatoes, roughly chopped
- 1 cup white onion, roughly chopped
- 1 cup carrots, roughly chopped
- 3 cloves garlic, minced
- 1 Tbsp tomato paste
- 3 cups vegetable broth
- ¼ cup fresh basil, chopped
- ¼ cup coconut or whole milk
- 2 Tbsp olive oil
- Sea salt and pepper to taste
- In a large pot, over medium heat, add olive oil and sauté onions and carrots until soft, about 10 minutes.
- Add garlic and cook until fragrant, about 2 more minutes.
- Add tomatoes, tomato paste, basil and broth. Season with sea salt and pepper and stir everything together.
- Bring to a boil; then lower heat and let it simmer uncovered for about 30 minutes.
- Pour in milk of choice. With an immersion blender and blend until smooth. You can also remove the soup from the pot and put it through a food processor until smooth.
- Separate into 4 equal servings and enjoy.
