Ingredients:
- 2 lbs ground beef
- 1 cup zucchini, diced
- 1 cup red onion, diced
- 2 cups bell peppers, diced
- 1 jalapeno, minced
- 2 cups tomatoes, diced
- 1 cup frozen corn
- 2 cloves garlic, minced
- 4 Tbsp chili powder
- 2 Tbsp cumin
- 1 tsp paprika
- 4 cups beef stock
- 1 cup tomato sauce
- 1 Tbsp live oil
- Sea salt and pepper to taste
- ½ cup avocado (with each serving, optional)
- In a large pot heat olive oil on medium-high heat and cook onions and garlic for about 2-3 minutes, until fragrant.
- Add the ground beef to the pot and cook until brown, about 5 minutes, stirring occasionally. Add the chili powder, cumin and paprika, mix to combine.
- Add the zucchini, bell peppers, tomatoes, jalapenos and corn to the pot. Mix to combine.
- Add the tomato sauce and beef stock, stir well.
- Cover the pot and reduce the heat to medium. Let the soup simmer for about 25 minutes.
- Season with salt and pepper to taste.
- Separate out into 5 equal servings.
- (Optional) Top with avocado.
