Sweet Potato Breakfast Sandwich

Ingredients:- 2 Eggs
- 1 Cup Grated Sweet Potato
- 1 Cup Kale or Spinach
- 1 Tbsp Olive or Coconut Oil
- ½ Tsp Cumin
- 1/8 Tsp Paprika
- 1/8 Tsp Garlic Salt
- Heat 1 tsp oil on frying pan at medium-low heat.
- In a mixing bowl whisk 1 egg. Add in grated sweet potato plus seasonings and 1 tsp oil. Mix well until thoroughly combined.
- Place mixture on the frying pan and cook. (Makes 2 sweet potato pancakes, “sandwich buns”).
- While pancakes are cooking sauté kale/spinach with 1 tsp oil in another pan on medium heat for 3-5 minutes. Season with salt and pepper to taste.
- Fry or scramble remaining egg in the same pan (remove kale/spinach or keep in, it’s up to you).
- Place one pancake on plate and top with kale/spinach and egg, top with other pancake.
