Ingredients:
- 12 Eggs
- 1/2 cup whole milk
- 1/2 cup Feta cheese
- 1 Tbsp olive oil
- 1 cup onion, chopped
- 1 cup spinach, chopped
- 1 Tbsp garlic, minced
- 6 Strips uncured bacon, cooked and chopped
- Sea salt and pepper to taste
- Preheat oven to 375°. Spray an 8x8 pan with organic cooking spray.
- In a large skillet, over medium heat, add olive oil, onion, spinach and garlic. Saute until the onions and spinach are slightly wilted and soft. Pour the mixture into the greased pan. Set aside.
- In a large bowl, beat the eggs and then stir in the milk and add salt and pepper. Set aside.
- Add 2/3 of the chopped bacon and 2/3 of the Feta cheese to the pan with the onions and spinach. Top with the egg mixture. Stir a little bit to distribute the ingredients evenly. Add the remaining bacon and Feta on top.
- Bake for about 40-45 minutes or until cooked throughout. You can test this by sticking a toothpick into the center of the casserole and it comes out clean.
- Divide into 8 equal servings.
