Ingredients:
- 2/3 cups Quinoa, dry
- 1 1/2 Cups Vegetable Broth
- 1 Cup Onion, chopped
- 1 Tbsp. Olive Oil
- 1 Cup Red Bell Pepper, chopped
- 1/2 cup Carrots, chopped
- 1/2 cup Cauliflower, chopped
- 1 Cup Green Beans, chopped
- 2 Tbsp. Garlic, minced
- Sea Salt and Pepper
- Seasonings of your choice
- Cilantro, Basil, Parsley
- Pour Quinoa in the slow cooker and add Olive Oil to coat
- Stir in the broth, Onion, Peppers, Cauliflower, Green Beans and Garlic. Season with Salt and Pepper
- Cook on low for 4-6 hours or high for 2-4 hours. Liquid should be completely absorbed into the Quinoa
- When ready to serve, top the Quinoa with your choice of Cilantro, Basil or Parsley
- Divide into 4 equal servings
