Mushroom & Cauliflower Rice Sauté

Ingredients:
- 3 cups sliced mushrooms
- 3 cups cauliflower rice
- 2 cups onions, chopped
- 4 Tbsp olive oil, divided
- 4 cups spinach
- 4 Tbsp garlic, minced
- 2 Tbsp tamari sauce or coconut aminos
- Sea salt and pepper to taste
- In a large skillet, heat 2 Tbsp of olive oil and add the cauliflower rice. Pan fry for about 5 minutes and set aside.
- In the same skillet add the remaining 2 Tbsp of olive oil and onions. Sauté until fragrant.
- Toss in the mushrooms and sauté for another 5 minutes and then add the garlic. Stir to combine.
- Add the cauliflower rice and tamari (or coconut aminos). Stir and cook until the cauliflower rice has absorbed the tamari sauce.
- Toss in the spinach and cook until slightly wilted.
- Divide into 4 equal servings.
