Ingredients:
- 2 Eggs
- Sea Salt and Pepper to taste
- 1 Tbsp Olive Oil
- Pinch of Red Pepper Flakes
- ½ Cup Baby Spinach, packed
- ¼ Cup Sun-Dried Tomato, finely chopped
- ¼ Cup Roasted Red Pepper
- Sprinkle of Parmesan Cheese
- In a small mixing bowl, beat together Eggs and Salt.
- Heat Olive Oil in a skillet over medium-high heat. Add Spinach and Red Pepper Flakes. Cook until almost wilted, stirring occasionally.
- Add the Sun-Dried Tomatoes and Roasted Red Peppers and cook for 30 more seconds.
- Add the Eggs and cook, stirring constantly for up to 1 minute until the Egg is cooked.
- Sprinkle Parmesan Cheese and Black Pepper on top and stir to combine.
