Ingredients:
- 1 Egg
- ¼ Cup Whole Milk Ricotta Cheese
- 2 Tbsp Coconut Milk
- 1 Tbsp Chia Seeds
- 1 tsp Butter
- ¼ tsp Lemon Zest
- 1/8 tsp Baking Soda
- 1 ½ Tbsp Coconut Flour
- ¼ tsp Vanilla Extract
- ½ Cup Berries (of your choice)
- Place all ingredients in a blender/ food processor, except for the butter, and blend until smooth.
- Heat the butter on a skillet over low-medium heat. Pour the batter on the skillet and cook on each side for about 2-4 minutes, or until puffed and golden-brown.
