Ingredients:
- 1 Cup GOLO Refried Beans (recipe below)
- 4 Eggs
- 2 Corn Tortillas
- ¼ Cup Avocado, diced
- 1/2 Cup Tomatoes, sliced
- 1 Cup Lettuce, Shredded
- 2 Tbsp Olive Oil
- Preheat Oven to 400 degrees.
- Warm beans in a pan on low heat.
- Brush both sides of the Corn Tortillas with 1 Tbsp Olive Oil and place on a baking sheet. Place in preheated oven and cook on one side for 5 minutes. Flip Tortillas and cook another 2-3 minutes until crispy.
- While beans are heating and Tortillas are baking, heat 1 Tbsp Olive Oil in a pan and lightly fry eggs.
- Place Tortillas on 2 plates and top with Refried Beans, Lettuce, Eggs, Avocado and tomatoes.
- Serve immediately.
