Ingredients:
- 1 ½ Cups Zucchini, raw and finely diced into cubes
- 1 ¼ Cups Panko Bread Crumbs
- 1 Clove Garlic, finely diced
- ¼ Cup Red Pepper, finely diced
- 3 Eggs, lightly scrambled
- ¼ Cup Cheese, shredded
- Salt and Pepper to taste
- 1 Tbsp Olive Oil, to grease the cookie sheet
Directions:
- Preheat oven to 350 degrees.
- Place Zucchini, Eggs, Panko, Red Pepper and Cheese into a mixing bowl and stir to combine. Add Sea Salt and Pepper.
- The batter should be moist and will come together easily. If it is too moist, add more Panko, 1 tablespoon at a time (do not add more than 4 Tbsp).
- Form 15 balls by rolling the batter into your hands. Place Bites onto a greased cookie sheet. They should be the size of a golf ball.
- Bake for 20 minutes or until outside is gold and crispy.
