Each serving contains: 2-proteins, 1- carb, 2-vegetables, 1-fat
Ingredients:
- 2 Tbsp. olive oil
- 2 lbs. ground turkey
- Sea Salt & Pepper (to taste)
- 1 lb. sweet potato, diced (approximately 4 cups chopped)
- 4 stalks celery, chopped
- 1/2 red onion, chopped
- 1 garlic clove, grated or minced
- 2 lbs. fresh spinach
- 1 cup dried cranberries
- 1 Tbsp. dried sage (or season to taste)
- 1/2 Tbsp. dried rosemary (or season to taste)
- Heat oil in pan, add ground turkey and cook until browned. Season with sea salt & pepper to taste.
- While meat is browning add diced potatoes to boiling water and cook until fork tender. Remove from heat, drain and rinse with cold water to stop the cooking process. Set aside in a colander to allow the excess water to drain out.
- Once meat is cooked, add celery, red onion & garlic cook until tender.
- Add spinach and cover until wilted. (Depending on the size of your pan, you may have to add the spinach in batches).
- Add sweet potatoes and cranberries and stir gently to combine.
- Add sage and rosemary to taste.
- Remove from heat and enjoy!
