Grilled Chicken Souvlaki Salad with Tzatziki

For chicken and marinade:
- 12 oz chicken breast or thighs, cut into bite-sized pieces
- 2 cloves garlic, chopped
- Juice and zest from 1 lemon
- 1 Tbsp plain Greek yogurt
- 3 Tbsp olive oil
- 1 tsp oregano
- ¼ tsp each sea salt and pepper
- ¼ cup cucumber, peeled, finely chopped and squeezed of all liquid
- ½ cup plain Greek yogurt
- 1 clove garlic
- 1/8 cup dill, chopped
- Juice from ½ lemon
- Sea salt and pepper to taste
- 2 cups romaine lettuce, sliced
- ¾ cup tomato, diced
- ¾ cup cucumber, diced
- ¼ cup red onion, diced
- 4 Kalamata olives, pitted and coarsely chopped
- 4 Tbsp tzatziki sauce
- Mix ingredients for tzatziki sauce at least one hour before serving.
- Mix chicken with the marinade ingredients and marinate for at least 30 minutes before cooking.
- Place the marinated chicken on skewers before grilling. Grill the chicken over medium-high heat until cooked, about 2-4 minutes per side.
- Assemble the salad ingredients and top with chicken and tzatziki sauce.
