Ingredients:
- 2 Cups Whole Wheat Pasta, cooked and drained
- 1 tsp Olive Oil
- 4 Cloves Garlic, minced
- 5 oz Can Coconut Milk
- 1 Tbsp Lemon Juice
- 1 tsp Ground Ginger
- Sea Salt and Pepper to taste
- 2 Cups Spinach
- 12 oz Chicken, cooked and diced
- In a skillet, cook Garlic with Olive Oil until golden brown, about 2 minutes.
- Add Coconut Milk, Lemon Juice and Ground Ginger. Cook over medium heat for at least 5 minutes.
- Transfer to a blender and add Spinach. Blend until smooth.
- Return sauce to skillet. Add the Pasta and Chicken. Stir to combine.
- Cook until heated through, about 5 minutes.
