Ingredients:
- 2 cups Sweet Potatoes, diced
- 1 Tbsp Olive Oil
- 1 cup Onion, thinly sliced
- 1 clove garlic, grated or minced
- ½ tsp Salt
- ½ tsp Pepper
- ½ tsp Ground Cumin
- ½ tsp Turmeric
- ½ tsp Ground Ginger
- ½ Tbsp Chili Powder
- ½ cup Vegetable Broth
- 3 cups Spinach
- Boil the diced sweet potatoes in water until fork tender. Do not overcook.
- While sweet potatoes are cooking, add olive oil to a large sauté pan and cook the onions for 3-4 minutes or until onions turn clear. Add garlic and sauté for another 2 minutes.
- Add salt, pepper, cumin, turmeric, ginger, chili powder and broth. Bring to a simmer.
- Add in the spinach and cook until wilted.
- Stir in sweet potatoes and heat through.
- Divide in 4 equal servings.
