Ingredients:
- 10 cups broccoli florets
- 2 cups onion, chopped
- 5 cups vegetable stock
- 4 cloves garlic, minced
- 1 tsp cumin
- ½ tsp thyme
- ½ tsp nutmeg
- 1 cup coconut or whole milk
- 4 Tbsp olive oil
- 2 tsp butter
- Sea salt & pepper to taste
- Put olive oil and butter in a large pot and heat over medium heat.
- Add onion and garlic and cook for 3-5 minutes, or until onions are translucent and garlic fragrant.
- Add the broccoli and cook for another 5 minutes.
- Sprinkle in cumin, thyme and nutmeg.
- Incorporate vegetable stock and stir. Reduce heat and bring to a simmer.
- Blend the mixture with an immersion blender or food processor until smooth, adding it back into the pot when done.
- Once smooth add the milk of your choice and mix.
- Heat for another 5-8 minutes and season with salt and pepper to taste.
- Separate into 6 equal servings and enjoy.
