Chopped Chicken Breakfast Hash

Ingredients:
- 3 oz chicken
- 1/4 of an onion, diced
- 2 Tbsp sliced scallion
- 1/2 red bell pepper, diced
- 1/2 cup potato, diced
- Salt and pepper to taste
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp chili powder
- 1 egg
- 1 Tbsp olive oil
- Heat skillet or saute pan. Add 1/2 Tbsp olive oil to pan. Add chicken to pan, as chicken cooks begin chopping with spatula.
- Once chicken is almost done cooking add onions and potatoes.
- Season with salt, pepper, onion powder, garlic powder, paprika and chili powder.
- Cook for 5 minutes. Add bell peppers and scallions.
- Cook until done.
- Remove cooked hash from pan and place onto plate. Put pan back on heat.
- Add 1/2 Tbsp olive oil and cook 1 egg to your liking. Add cooked egg on top of hash. Enjoy.
