Ingredients:
- 12 oz Boneless Chicken Breasts
- 1 tbsp Olive Oil
- Sea Salt and Pepper to taste
- 3 Garlic Cloves, minced
- 2 cups Sweet Potato, peeled and diced
- ½ cup Chicken Broth
- 2 cups Asparagus, cut into 2-inch pieces
- 1 cup Spinach
- 1 cup Yellow Pepper, diced
- ½ tsp Red Chili Flakes
- Cut Chicken into small pieces and season with salt and pepper
- In a skillet over medium heat, add Olive Oil, Garlic and Chicken. Sauté, stirring well for about 7-10 minutes or until cooked through. Set aside.
- In the same skillet, add Sweet Potato and Chicken Broth.
- Cook for about 7-10 minutes or until Sweet Potato is tender.
- Add Asparagus & Yellow Pepper and cook for about 4-5 minutes.
- Add Spinach and cook for another 2-3 minutes
- Season with Salt, Pepper and Red Chili Flakes.
