Ingredients
- 2- 5oz Chicken Breasts
- 2 oz Mozzarella Cheese, divided
- 1 Tbsp Olive Oil
- ½ Cup Roma Tomatoes, thinly sliced
- ½ Tsp Dried Oregano
- ½ Tsp Dried Basil
- Sea Salt and Pepper to taste
- 6 Basil Leaves
- 2 Cloves Garlic, minced
- ¼ Cup Balsamic Vinegar
- ½ Tsp Brown Sugar
- Preheat oven to 350 degrees. Cut ¾ of the way through the chicken breast to create a pocket. Season each breast with salt, pepper, dried oregano and basil.
- Fill each breast with 1 oz mozzarella cheese, ¼ cup tomatoes and 3 basil leaves. Seal with toothpicks.
- Heat olive oil in large pan, add chicken and cook for about 2-3 minutes on each side or slightly golden.
- While chicken is cooking mix together garlic, balsamic vinegar and brown sugar in a small bowl. Incorporate this mixture in with the chicken. Bring to a simmer and allow sauce to thicken.
- Transfer chicken and sauce into a baking dish and put into the oven to cook for another 10-15 minutes or until chicken is cooked all the way through and cheese has melted.
- Drizzle chicken with juice from the pan and remove toothpicks before serving.
