Ingredients:
- 2 cups brown rice, cooked with chicken or vegetable Broth
- 1 tsp sea salt
- 24 oz ground turkey
- Cajun or Creole seasoning to taste
- 4 Tbsp olive oil
- 2 cups onion, diced
- 2 cups green bell pepper, chopped
- 4 cups tomatoes, diced
- Add 2 Tbsp olive oil to a large pot over medium-high heat.
- Add ground turkey and season well with Cajun/Creole seasoning. Break with a spatula and sauté until browned.
- Remove turkey from heat and set aside.
- Add the remaining 2 Tbsp olive oil to the pan, turn heat to high and add onions, bell peppers and additional seasoning.
- Cook, stirring occasionally, until vegetables are softened and browned.
- Add tomatoes to the onions and bell peppers, cook for 1 minute.
- Add turkey back in along with the cooked rice and stir well to combine.
