Ingredients:
- 2 large green bell peppers, halved (or any color of choice)
- 4 eggs
- ½ cup whole milk
- 2 Tbsp green onion, chopped
- ½ cup spinach, chopped
- ¾ cup cheddar cheese, shredded
- Sea salt and pepper to taste
- Preheat the oven to 350 degrees F.
- In a bowl mix eggs, milk, salt, pepper, green onions, spinach and ½ cup of cheese until combined.
- Lay the peppers in a baking dish (snug so that they don’t move or spill). Fill each pepper with the egg mixture evenly.
- Sprinkle each pepper with the remaining cheese. Bake for 45-50 minutes or until eggs are set.
