Ingredients:
- 1 ½ lbs. sirloin steak, about ½ inch thick
- 2 ½ cups mushrooms, sliced
- 2 cups onions, thinly sliced
- 1 garlic clove, finely chopped
- 3 Tbsp olive oil
- 1 ½ cups beef broth
- 1 tsp. sea salt
- ¼ cup flour
- 1 ½ cup plain Greek yogurt
- 3 cups egg noodles, cooked
- Cut beef into small strips.
- Cook mushrooms, onions and garlic in olive oil in 10-inch skillet over medium heat, stirring occasionally, until onions are tender; remove from skillet.
- Cook beef in the same skillet until brown. Stir in 1 cup of the broth and salt. Heat to boiling; reduce heat. Cover and simmer 15 minutes.
- Stir remaining ½ cup broth into flour; stir into beef mixture. Add onion mixture; heat to boiling, stirring constantly. Boil and stir one minute. Stir in Greek yogurt; heat until hot (do not boil).
- Separate into 6 equal servings.
- Serve over 1/2 cup egg noodles.
