Ingredients:
- 12 oz chicken breast
- 1 cup fresh basil
- ¼ cup olive oil
- 2 Tbsp pine nuts
- ¼ tsp crushed red pepper
- 1 clove garlic, minced
- Sea salt and pepper
- Preheat oven to 375° F degrees.
- Place basil, pine nuts, crushed red pepper and garlic in a blender or food processor and pulse until well chopped.
- Add olive oil and pulse until smooth and season to taste.
- Place chicken in a baking dish, cover with pesto and bake until chicken is no longer pink in the center, about 30 minutes.
- Separate into 4 equal servings and enjoy.
