Zucchini & Pistachio Salad
Zucchini Salad with Pistachios and Quinoa

Ingredients:
- 1 Cup Quinoa, rinsed and cooked
- 2 Tbsp Olive Oil
- 2 Cups Zucchini, thinly sliced
- 1 ½ Cups Yellow Squash
- 1 Clove Garlic, thinly sliced
- ½ Cup Scallions, thinly sliced
- 8 oz Pistachios, chopped
- Zest and Juice from 1 Lemon
- ½ Cup Mint Leaves, packed
- In a large skillet heat the oil over medium heat. Cook the zucchini and squash for about 7 minutes or until golden and tender, stirring occasionally. Next, incorporate the garlic and cook until fragrant. Add salt and pepper to taste.
- Add in the quinoa and then stir in the scallions, pistachios, lemon zest and juice, and mint. Salt and pepper to taste and serve immediately.
