Veggie and Quinoa Breakfast Bowl

Ingredients:
- 1 Tbsp Olive Oil
- ½ Cup Mushrooms, sliced
- 1 Cup Spinach, chopped
- Sea Salt and Pepper to taste
- 2 Eggs, Poached
- 1/2 Cup Quinoa, cooked and warm
Directions:
- In a skillet, heat Olive Oil over medium high heat.
- Add Mushrooms and season with Salt and Pepper. Cook Mushrooms for 5 to 7 minutes and then add Spinach. Cook both for another 2 minutes,
- Add the Quinoa to the bottom of a serving bowl. Next, add the Mushrooms and Spinach mixture. Top bowl with 2 Poached Eggs.
