Ingredients:
- 2 Tbsp olive oil
- ½ cup yellow onion, diced
- ½ cup celery, diced
- 1 cup red bell peppers, diced
- 1 cup tomatoes, diced
- 1 cup zucchini, diced
- 1 cup black beans, rinsed and drained
- 2 cloves garlic, minced
- sea salt and pepper to taste
- 2 tsp chili powder (add more if desired)
- 1 cup plain Greek yogurt
- 4 oz. cheddar cheese, grated
- Heat 2 Tbsp olive oil over medium heat in a medium sized pot. Add onion, sea salt and pepper and cook for about 5 minutes, stirring occasionally, until softened.
- Add garlic, celery, and peppers and cook until vegetables are soft, about 4 minutes.
- Add chili powder, beans, zucchini and tomatoes. Bring mixture to a simmer, then reduce the heat to low, cover and cook for 30 minutes. Stirring occasionally.
- Uncover and cook for an additional 15 minutes. Stirring occasionally.
- When serving, add 1/2 cup yogurt and 2 oz. cheese to each serving.
