Ingredients:
- 2 cups quinoa, cooked and cooled
- ½ cup cucumber, chopped
- ½ cup corn
- ½ cup cherry tomatoes, halved
- ½ cup red onion, chopped
- ¼ cup Italian parsley, chopped
Ingredients:
- 1 tsp Dijon mustard
- 1 ½ Tbsp lemon juice
- ½ Tbsp white wine vinegar
- 1 clove garlic, minced
- Pinch of red pepper flakes
- Sea salt and pepper to taste
- ¼ cup olive oil
- Vinaigrette: In a small bowl whisk together mustard, lemon juice, vinegar, garlic, red pepper flakes, salt and pepper. Gradually whisk in olive oil.
- In a medium salad bowl, combine cucumber, corn, tomatoes, onion and parsley and quinoa. Add vinaigrette to mixture and toss to combine.
- Serve and enjoy!
