Ingredients:
- 6 Tbsp hemp seeds
- ½ cup kale
- ½ cup shredded carrots
- ½ cup shredded purple cabbage
- ½ cup avocado, diced
- ¼ cup diced sweet potatoes
- ¼ cup hummus
- 1 Tbsp olive oil
- Preheat oven to 400° and line one large baking sheet with parchment paper.
- Spread out the diced sweet potatoes on sheet and drizzle with olive oil and toss until coated. Sprinkle with salt and pepper.
- Roast for 15 minutes, halfway through roasting and flip the sweet potatoes around and allow them to continue to cook.
- Set aside when finished.
- Assemble the bowl: Add kale, sweet potatoes, carrots, cabbage, hummus, avocado, and hemp seeds.
- Mix together until well combined. Enjoy!
