Stuffed Sweet Potato Breakfast

Ingredients:- 1/2 small sweet potato, baked (should be about 1/2 cup of sweet potato flesh - if yours is too big, scoop some of the flesh out and save for a later meal)
- 1 Tbsp almond butter*
- 1/4 cup blueberries
- 1/4 cup bananas, sliced
- Sprinkle of cinnamon
- To bake the sweet potato, preheat oven to 400 °. Using a fork, poke holes in various spots on the potato. Place on the oven rack and bake for 30-40 minutes or until fork tender.
- When the sweet potato is done, remove from oven and cut in half.
- Drizzle with almond butter and top with blueberries and bananas.
- Sprinkle with cinnamon.
Note - you can change the fruits depending on your personal preferences. *Almond Butter is on the "limit list" items on this list should be consumed occasionally for best results. In this recipe the Almond Butter is considered 1 protein serving and also serves as the fat serving as well.
