Strawberry & Beet Chia Seed Pudding

Ingredients:
- 2 Tbsp Chia Seeds
- ½ Cup Whole Milk
- ½ Cup Strawberries, fresh or frozen
- ¼ Cup Beets, cubed and steamed
- ½ Tsp Vanilla Extract
- 1 Tbsp Coconut Oil
- 1 Tbsp Maple Syrup
- Optional Topping: Coconut Shavings
- Using a blender or food processor, add the milk, strawberries, beets and vanilla and coconut oil. Blend until completely smooth.
- Slowly pour into a small bowl and add the chia seeds. Stir until thoroughly mixed.
- Over with saran wrap and place in the fridge overnight, or for at least 4-5 hours.
- When ready to serve add the maple syrup and stir. Add the coconut shavings last, if desired.
