Spicy Salsa Rice
Spicy Salsa Rice
Makes 4 servings
Each serving contains: 0 protein, 1 carb, 0 veg, 1/2 fat
Ingredients:
- 2 Tbsp Olive Oil
- 1 Cup Red Onion, diced
- 1 Cup Brown Rice
- 12 oz. Jar Salsa
- 1 Cup Vegetable Broth
- 3 Cloves Garlic, minced
- ¼ tsp Cayenne Pepper
Directions:
- In a large skillet (skillet must have a lid), heat the Oil.
- Sauté the Onions until golden brown and then add the Garlic and Cayenne Pepper and cook for 1 minute.
- Add the dry Rice and stir frequently until Rice starts to brown.
- Add the Salsa and Vegetable Broth and mix well. Cover with lid.
- Bring to a simmer and reduce heat. Simmer until the liquid has been absorbed. Check the directions for the Rice to get cooking time. Keep extra Broth on hand in case all liquid is absorbed before the Rice has cooked completely.
- When done, fluff with a fork.
