Spicy Beef and Vegetable Skillet

Ingredients:
- 12 oz Top Sirloin or Top Loin, cut into 1-inch pieces
- 2 Tbsp Olive Oil
- Sea Salt and Pepper to taste
- 3 Cloves Garlic, minced
- ½ Cup Onion, chopped
- 1 Cup Potato, peeled and diced into ½-inch cubes
- ½ Cup Beef Broth
- 1 ½ Cup Asparagus
- 1 Cup Spinach
- ¾ Cup Yellow Bell Pepper
- ¼ Cup Jalapeno Pepper
- 1 tsp Red Pepper Flakes
- Season Beef with Salt and Pepper.
- Heat Olive Oil over medium heat and add Garlic, Onion, Jalapeno Pepper and Beef. Sauté for about 10-12 minutes or until Beef is cooked through. Remove from skillet and set aside.
- In the same skillet, add Potatoes and Beef Broth. Cook for about 7-10 minutes or until the Potatoes are tender.
- Add Asparagus and Yellow Bell Peppers and cook for 4-5 minutes.
- Add Spinach and cook for another 2-3 minutes.
- Combine the Vegetable mixture with the Beef mixture.
- Season with Sea Salt, Pepper and Red Pepper Flakes.
- Serve warm.
