Ingredients:
- 4 cups spaghetti squash, cooked and shredded
- 1 cup celery, chopped
- 1 cup onion, diced
- 2 cups cole slaw mix (cabbage & carrots)
- 2 Tbsp olive oil
- ¼ cup coconut aminos
- 2 tsp coconut palm sugar
- ¼ tsp white pepper
- 3 cloves garlic, minced (2 if cloves are large)
- 2 tsp freshly grated ginger
- In a small bowl mix coconut aminos, garlic, coconut palm sugar and ginger. Set aside.
- In a large skillet, heat olive oil. Add onion and celery. Cook for about 3-4 minutes, then add cole slaw mix. Cook until heated through, about 1-2 minutes.
- Stir in spaghetti squash and coconut aminos sauce. Mix until well combined. Cook for about 2-5 minutes.
