Ingredients:
- ½ Cup Brown Rice, cooked
- 4 Tbsp. Citrus Dressing, (see below) mixed with ½ tsp Jerk Seasoning
- 12 oz. Shrimp, sautéed with ½ tsp Jerk Seasoning
- ½ Cup Fresh Pineapple, diced
- 1 Cup Avocado. Diced
- Fresh Cilantro, chopped for garnish
- Toss the Rice with Citrus Dressing.
- Divide evenly between 2 bowls.
- Top each with equal amounts of Shrimp, Pineapple and Avocado.
- Sprinkle with Cilantro.
- ½ Cup Olive Oil
- 2 tsp. Lemon Juice, freshly squeezed
- 2 tsp. Orange Juice, freshly squeezed
- 2 tsp. Honey
- 1 tsp. Lemon Zest
- 1 tsp. Orange Zest
- ¼ tsp. Sea Salt
- Combine all ingredients and mix well.
- Store in a sealed container in the refrigerator and use within a week.
