Savory Oatmeal Bowl

Ingredients:
- ½ Cup Oatmeal, cooked
- 1 tsp Butter
- ½ Cup Chopped Vegetable Mixture (Mushrooms, Red Onion, Green Peppers)
- ½ Cup Spinach
- 1 Clove Garlic, minced
- 2 Fried Eggs
- ¼ Cup Avocado, diced
- Sea Salt and Pepper to taste
- ¼ tsp Red Pepper Flakes
- In a saucepan sauté Vegetable Mixture in Butter until soft, about 5 minutes.
- Add Spinach and Garlic and sauté until Spinach is just wilted, about 1 minute.
- While Vegetables are cooking, cook your Eggs to desire doneness.
- Top the Oatmeal with Vegetables, Eggs and Avocado. Season with Salt, Pepper and Red Pepper Flakes.
