Ingredients:
- 3 Tbsp Olive Oil
- 1 Cup Celery, chopped
- 1 Cup Carrots, chopped
- 1 Cup Onions, diced
- 1 Cup Red Bell Peppers, diced
- 1 tsp Garlic, minced
- 8 Cups Chicken/ Vegetable Stock
- 1 (14 oz) can Diced Tomatoes
- Sea Salt and Pepper to taste
- 1 tsp Oregano
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- ½ tsp Crushed Red Pepper
- 2 Bay Leaves
- 2 Fresh Thyme Sprigs
- 30 oz Chicken/ Turkey, cooked & shredded
- 3 Cups Green Cabbage, chopped
- 1 Cup Green Beans, chopped
- 1 Cup Broccoli Florets
- In a large pot, heat Olive Oil over medium heat and add the Celery, Carrots and Onions. Sauté for about 5 minutes then add Garlic and Red Bell Peppers. Cook for another 5 minutes.
- Stir in Broth, Diced Tomatoes, Cabbage, Green Beans, Broccoli and add the seasonings. Bring to a boil.
- Add Shredded Chicken/Turkey and reduce heat to simmer for about 15-20 minutes.
- Separate into 5 equal servings and enjoy.
