Ingredients:
- 1 (6oz) salmon filet
- Teriyaki sauce (recipe below)
- 1/2 Tbsp fresh ginger, grated
- 1 clove garlic, minced
- 2 cups bok choy, halved or quartered
- 2 Tbsp tamari
- 1 Tbsp water
- 1/2 Tbsp honey
- 1/2 Tbsp garlic
- 1/2 Tbsp fresh ginger
- Preheat oven to 350°
- Prepare teriyaki sauce in a medium sized bowl. Set aside 1 Tbsp of sauce to use later.
- Place salmon filets in a small bowl and pour teriyaki sauce on top. Let it marinade in the refrigerator for 30 minutes.
- Remove salmon from the marinade (after 30 minutes) and arrange on a baking sheet with the bok choy. Discard the used marinade.
- Brush the reserved teriyaki sauce on the bok choy and bake in the oven for 20 minutes, or until salmon is cooked throughout.
