Roasted Potatoes and Fried Sage

Ingredients:
- 2 Cups Red Potatoes, diced
- 4 Cloves Garlic, excess paper removed but not peeled
- 4 Tbsp Olive Oil, divided
- Zest of 2 Lemons
- 10 Fresh Sage Leaves
- Sea Salt and Pepper to taste
- Preheat the oven to 400 degrees. Line a baking sheet with tin foil.
- In a mixing bowl add 3 tbsp olive oil, salt, pepper, garlic and potatoes. Toss to coat completely.
- Lay mixture onto the baking sheet. Bake for 20 minutes, toss and flip the potatoes, then bake for another 15 minutes or until desired crispiness. Set aside.
- In a separate pan heat the remaining olive oil on the stove over medium heat. Add sage leaves and cook until crispy. When finished place the leaves on a paper towel to dry. Season with salt.
- Top the potatoes with lemon zest and sage leaves.
