Ingredients:
- ¾ cup quinoa, covered in 1” water and soaked for 6-8 hours
- ¼ cup water
- ½ tsp baking powder
- ½ tsp sea salt
- 1 tsp Italian seasoning
- ½ tsp garlic powder
- 2 Tbsp olive oil
- Preheat oven to 425 degrees.
- Line a 9” pan with parchment paper and spread 1 Tbsp olive oil evenly over the paper.
- Drain and rinse the quinoa, then add to blender or food processor. Add ¼ cup water, baking powder, seasonings and remaining olive oil. Blend until smooth and creamy (it will resemble cake batter).
- Pour batter onto prepared pan and bake for 15 minutes. Remove from oven, flip carefully, and return to oven for another 10-15 minutes until browned and edges are crispy.
- Top with sauce, cheese, veggies and anything else you like, and bake for another 12-15 minutes until cheese has melted and started to brown.
