Pressure Cooker Caribbean Spiced Shredded Beef

Ingredients:
- 24 oz Chuck Roast
- 4 tsp Butter
- 2 tsp Sea Salt
- 2 tsp Garlic Powder
- 1 tsp Cinnamon
- 1 tsp Dried Thyme Leaves
- 1 tsp Ground Ginger
- 1 tsp Turmeric
- 3 Whole Cloves Garlic
- 1/4 Cup Water
- 2 Cups Green Bell Peppers, chopped
- ½ Cup Brown Rice
- ½ Cup Onion
- ¾ Cup Romaine Lettuce, chopped
- 1/2 Cup Avocado
- 1 tsp Cilantro, chopped
- Mix together all of the seasonings except Garlic Cloves. Rub evenly over the Chunk Roast. Stick the Garlic Cloves into the Roast and place the Roast in your pressure cooker.
- Add Peppers on top of the Roast.
- Pour Water around (not on top) of the Roast.
- Set the manual pressure setting time to 90 minutes. Let it vent naturally when the timer expires.
- Transfer the Roast to a serving dish and shred the Roast with two forks. Pour some of the juices from the pot of the Shredded Beef.
- Serve the Beef with Avocado, Onion, Romaine and Cilantro.
