Ingredients:
- 1/2 cup basil
- 1 clove garlic
- 1 Tbsp. lemon juice
- Sea salt & pepper
- 2 Tbsp. olive oil
- 1 Tbsp. roasted pine nuts
- 2 Tbsp. Parmesan cheese
- 1 lb. shrimp, peeled and deveined
- Wooden skewers
- Pulse the basil, garlic, Parmesan, olive oil, lemon juice, pine nuts, salt and pepper in a food processor or blender or until smooth.
- Marinate the shrimp in the pesto for at least 20 minutes in the refrigerator.
- Skewer the shrimp and grill over medium high heat until cooked, about 2-3 minutes per side.
